Great things come in small packages!

I traveled a lot as a yoga teacher. From Costa Rica to Thailand, then on to Kolkata and Mumbai, India, and back home to Middleburg, Virginia. I taught yoga from Hollywood to Bollywood. In my travels I noted how people snack and eat in different countries. Mumbai, with it’s street food and variety of grains, made me think differently about snacking.

As a vegetarian, I found my B12 was lacking when I returned from my travels. I was not eating many grains, or bread. A solution to that occurred to me after visiting a local lavender farm. I had the idea of adding toasted oats and granola to my daily diet and lavender-infused honey.

At the time, I was teaching yoga and living in the finished loft in a horse barn in Middleburg, Virginia. A bucket of oats are a part of the diet to keep horses going. So, the thought occurred to me to develop a snack with toasted oats, nuts, seeds, but sweeten the mix with lemon and lavender-infused honey.

I had returned from teaching in Mumbai. The golden combination of pumpkin and sunflower seeds with lavender and lemon-infused honey over toasted oats proved a winning combination in my test kitchen.

Spoon Up! became a conscientious effort to improve my nutrition with a healthy solution to get my B12.

So, whether I am pedaling through the lavender fields of Provence, France, or practicing pranayama on the beach in Phuket, Thailand, Great Morning Granola keeps me going from dawn to dusk!
